There are three grades of brisket select, choice and prime. Prime has more marbling and is the most tender and juicy and cost more. Select and choice is what is cooked by the local places trying to cook brisket in my area. We want you to have the best so we cook prime. There is 3-5 pounds of fat trimmed off of a whole brisket which is the flat and point muscle groups. When it is cooked the meat loses some weight. Prime brisket is more expensive than other barbecue but is still affordable and very tasty. The biggest hurdles are creating tenderness and juicy meat that isn't dry.
